Turkey Stuffed Mushrooms
1 lb. large fresh mushrooms (12 or so)
2 T. butter
1 clove garlic, minced
¼ c. finely chopped onion
2 T. grated Parmesan cheese
¼ t. salt & pepper
1/8 t. dried Oregano leaves
½ c. cooked ground turkey
2T. breadcrumbs
2 T. olive oil

Clean mushrooms, remove and reserve stems. In skillet over medium heat, cook and stir mushroom stems in butter for 5 minutes. Add garlic, onion, cheese, salt & pepper, oregano ground turkey, bread crumbs and 1 T. olive oil. Mix well and fill mushroom caps. Grease pan with1 T. olive oil place caps onto baking pan. Bake 375 for 25 mins.


Maple Glazed Turkey Drumsticks

¼ c. maple syrup
2 t. hot mustard
1 T. worcestershire sauce
½ t. salt & pepper
1/8 t. cayenne pepper
1-2 med. onions cut up
2 T. unsalted butter
2- 1 ¼ lb. drumsticks

Mix the first five ingredients together and set aside. Wash and pat dry the drumsticks and dot with the butter.  Slice up the onions and lay on the bottom of a roasting pan. Put drumsticks on top of the onions. Roast for 30 mins. @ 400  Brush legs with the sauce and reduce oven to 325. Continue roasting and basting with the sauce every 20 mins.  Roast for approx. 90 mins longer or until meat falls away from the bone.    Enjoy!!!


Cajun Turkey Pasta

2 lb. turkey breast cut into strips
3 t. Cajun seasoning
3 T. butter
15 slices red bell peppers
15 slices green bell peppers
8 fresh mushrooms, sliced
2 green onion, sliced
1/3 t. dried basil leaves
¼ t. black pepper & salt
½ t. lemon pepper
¼ t. garlic powder
2 c. heavy cream
8 oz. linguine, cooked according to pkg.
Parmesan cheese to taste

In a med. bowl toss turkey strips with Cajun seasoning.  In large skillet over medium heat melt butter. Add turkey, Cook and stir for 2-3 minutes. Add peppers, mushrooms and onions. Cook and stir for 2-3 more minutes. Reduce heat, add basil, black pepper, lemon pepper, salt, garlic powder and cream.  Heat through.  Add linguine and toss. Cook until heated through, sprinkle with Parm cheese. Serve with salad and garlic bread. Yum!!!!


Turkey Chili

Yields: 8 cups
2 T. butter
1 c. red onion, chopped
2 lg. celery stalks, chopped
1 (14-1/2) oz. can chicken broth
2 (14-1/2) oz. can diced tomatoes
1 c. water
2-15 oz. cans tomato sauce
2 T. chili powder
2 T. garlic powder
1 T. cumin
1 T. dried thyme
1 t. oregano
1 t. cayenne pepper
1- 15 oz. can kidney beans, drain
1-12 oz. can whole kernel corn, drain
3 lbs. browned ground turkey

Melt butter in heavy saucepan over medium heat.  Add onion and celery, saute until they soften (5 mins.)  Add spice mixture to sauce pan, toast until aromatic. Add chicken broth, tomatoes, water and tomato sauce.  Mix in beans and corn. Bring mixture to a boil. Reduce heat to medium-low and simmer. Season with salt, pepper and  red chili pepper, if desired.

Thai Grilled Turkey Pizza

2 C. shredded cooked turkey
1 recipe of Thai sauce
½ c. sliced green onion
1 medium carrot cut into julienne strips
¼ c. chopped fresh cilantro
½ c. shredded Mozz. Cheese (2 oz.)

Spray grill with non-stick spray. Preheat grill for direct heat cooking. In medium pan over low heat, simmer turkey and Thai sauce until warm. Drain excess liquid. Unroll pizza dough and pat into rectangle, (10-13 in.) Cut into 4 equal pieces. Place dough on grill, and cook 4-5 mins. or until dough is puffy and lightly brown. Turn over and grill 2-3 mins.. Top each pizza with ¼ of turkey mixture. Cover grill and heat until cheese melts.

Thai Sauce: (for Thai Grilled Turkey Pizza, above)

¼ c. fresh lime juice
2 T. soy sauce
2 T. chopped gr. onion
1 T. fresh snipped cilantro
1 T. peanut butter
1 T. olive oil
1 T. br. sugar
1 t. minced fresh ginger
¼ t. crushed red pepper flakes
2 cloves minced garlic


Pulled Turkey on a Bun
2-3 turkey legs
2 turkey thighs
¼ c. chopped onion
2 T. butter
½ c. water salt & pepper to taste
Large bottle of BBQ sauce or make your own.

Lay the turkey in a crock pot, add onion, butter (not melted), water and salt & pepper. Pour the whole bottle of BBQ sauce on top. Cover and cook on high for 3-4 hrs. Turn to medium or low heat and continue cooking for 4-5 hrs. The meat will fall off the bone. Pick out any bones and add more BBQ sauce if needed. Stir well until heated through and serve on a bun.


Turkey Barley Soup
2 T. butter
2 onions, chopped
2 cloves of garlic, minced
¼ lb. mushroom, sliced and optional
½ t. rosemary, crushed
6 c. turkey stock
¾ c. Pearl barley
2-3 c. chopped broccoli
2 T. cornstarch
¼ c. water
2 c. milk

Saute onions, mushrooms, garlic and rosemary in butter. Pour in the turkey stock and ¾ c. of barley. Simmer for about 45 minutes, until barley is soft. Stir cornstarch into water and 2 cups of milk, add to soup. Stir in broccoli and simmer for 10-20 minutes over low heat.


Savory Turkey Meat Loaf & Roasted Potatoes
1 can Campbell’s Tomato Soup
2 lb. ground turkey
1 can Durkee French Fried Onion
1 egg beaten
¼ c. Worcestershire Sauce
8 medium potatoes cut in quarters

Mix ½ cup soup, turkey, 1/2 can onions, egg, and Worcestershire thoroughly. In a baking pan shape firmly into 8” by 4” loaf. Place potatoes around the turkey loaf. Bake at 350 for about 1 hour. Stir the potatoes. Spoon the remaining soup over turkey loaf. Bake another 25 mins. or until the turkey loaf is done. Stir potatoes. Sprinkle remaining onions over turkey loaf. Bake 5 minutes or until onions are golden. Serves 8.


Turkey Salad Sandwich
4-5 lbs. turkey breast
onions, chopped
celery, chopped
green & red peppers, chopped
walnuts or sliced almonds…optional
salt & pepper to taste
lemon pepper to taste
fresh green grapes, whole or sliced in half….optional

Cook turkey in a crock pot for 5-7 hours or until meat falls apart. Remove and let cool. Dice turkey and place in a large bowl. Add all ingredients except grapes. You can add whatever amount of mayonnaise that you like. Stir gently and then add the grapes. Serve on a bun or in a wrap.


Stuffed Cabbage & Ground Turkey Soup

2 lbs. ground turkey
1 medium onion chopped
8 c. shredded cabbage
4 oz. shredded cheddar cheese
2 c. long grain rice
2 -1/2 c. water
2 (6 oz. ) can tomato paste
2 qts. canned tomatoes
3/4 c. ketchup
4 T. vinegar
2 T. sugar
2 T. worcestershire sauce
1 t. salt
1/2 t. black pepper
1 t. dried basil
1 t. garlic powder

In a large skillet brown the turkey half way then add the chopped onion and continue to brown and saute. Pour the meat mixture in the crock pot, Stir in cabbage, cheese and rice. In a medium bowl combine the water and tomato paste. Stir in remaining ingredients. Pour over turkey mixture and stir to combine. Cover and cook on low 6-8 hours or until rice is tender. May take a little longer. Stir occasionally. DELICIOUS!!!!
